The olives, mainly of the Frantoio and Leccino type, are harvested each year between the end of October and the first half of December. The new oil is shipped within a few days of cold press extraction and shipped to very fine delica shops and restaurants in Europe and Japan.
In 2007 a surprising blend has been created between the Italian refinement and the Japanese tradition of delicate chili seasoning: the extra-virgin olive oil with Shichimi (or 7 spices in Japanese).
